Tenderloin steak sits in a sauce of porcini mushrooms, shallots, chives, and creme fraiche. Out of this world.
SERVES: 2
PREP TIME: 5 Minutes
COOK TIME: 20 Minutes
Ingredients

2 Beef Tenderloin Steaks, 1 1/2" to 1 3/4" thickness
Salt and Pepper to taste
1 tsp. Olive Oil
1 oz. Porcini Mushrooms, roughly chopped
1 cup Beef or Chicken Stock
1/2 cup Shallots, minced
1/2 cup Creme Fraiche
1/4 cup Chives, chopped

Directions
Step 1  Step 1:
Place mushrooms in chicken stock to plump. Set aside. If you've decided on a fresh mushroom, skip this step.
 
Step 2  Step 2:
Season both sides of each filet with salt and pepper to taste. Add olive oil to pan and heat to very hot. Place tenderloin steaks into pan and cook for 4-5 minutes on each side for medium rare, a bit longer for medium well.
 
Step 3  Step 3:
Remove the meat to a warm platter when it is done to your liking. Add the shallots to the pan and saute 1-2 minutes until slightly softened.
 
Step 4  Step 4:
Add mushrooms to the pan and cook 2-3 minutes to brown. Add stock and creme fraiche, stir and cook about 1 minute more. Add chives and salt and pepper to taste. Serve sauce under each tenderloin steak. You may even have extra sauce - use it on mashed potatoes.
